City & Guilds NVQ Level 2 Diploma in Professional Cookery Day Release Apprenticeship

What is the Course About?

If you are working within the industry this course will support you to enable you to gain a sound professional knowledge of all aspects of food preparation and cooking to a nationally recognised qualification at Level 2 over two years of study. You will study food preparation and cooking in additional to food safety and hygiene.

This day release apprenticeship is designed to provide the practical techniques and skills alongside the theoretical knowledge and expertise to enable you to achieve a nationally recognised qualification from City & Guilds over two years of study.

You need to have full time employment within a professional kitchen to support your College training. You will explore food production, taste profiles and cooking starting with the basics before building and developing your skills to provide a sound knowledge of food preparation, cooking and finishing tasty and inspiring dishes to achieve the NVQ Level 2.

What subjects/units/modules* will I study?

NVQ Level 2 Diploma in Professional Cookery comprising mandatory and optional units such as:

Health and Safety

• Working as part of a team

• Maintain, handle and clean knives

• Prepare, cook and finish bread and dough products

Prepare, cook and finish fish or shellfish dishes

Prepare, cook and finish meat and poultry dishes

Prepare, cook and finish sauces, soups and dressings

Will I need any specialist uniform and/or kit?

Protective Kitchen Uniform (Hat, Jacket, Trousers, Apron, Non Slip Shoes)

Set of Professional Chef Knives

What are my progression and career options?

Successful completion could lead to study at Level 3 or continued employment in the workplace.

How will I be assessed?

The generic NVQ units/course content will be delivered by UCM lecturers through a day release model under practical observation. Further on the job training will be required in the work place with the employer and with UCM assessor visits.

The Highfield food safety award will be delivered by UCM lecturers over a 1 day period with assessment through a multiple choice question paper.

Underpinning knowledge papers devised by the awarding body, City & Guilds

Functional skills numeracy qualification will be delivered by UCM lecturers over a 1 year period with assessment through a written exam, where applicable.

Entry requirements

There are no formal qualifications required, although good basic education and a passion for cooking are desirable.

Candidates must become employed on a full time basis to qualify for the scheme.

Employers must be in agreement to provide on the job training with the support of UCM.
